Below are my choice of vegetarian options as you celebrate memorial Day

12. Cauliflower Sweet Potato Burgers

To prepare Cauliflower Sweet Potato Burgers, begin by preheating your oven to 400°F (200°C). On separate parchment-lined baking sheets, toss cauliflower florets and diced sweet potatoes with olive oil, ground cumin, and salt.

Roast both vegetables until they are lightly browned and caramelized, approximately 30 minutes, switching the pans from top to bottom halfway through to ensure even cooking.

Once roasted, transfer the cauliflower and half of the sweet potatoes to a food processor, pulsing until a coarse dough forms while leaving some texture. In a large mixing bowl, combine this mixture with the remaining sweet potatoes, cooked quinoa, almond flour, an egg (or vegan substitute), chili powder, chopped cilantro, and lime zest.

Form the mixture into patties and cook them in a skillet over medium heat, flipping once, until golden brown, about 4 minutes per side. Serve the patties on buns with spicy mayonnaise, lettuce, mashed avocado, and green onions

13. Smoky Black Bean Beet Burgers

For Smoky Black Bean Beet Burgers, start by preheating your oven to 375°F (190°C). In a food processor, combine cooked quinoa, finely diced red onion, chopped mushrooms, grated raw beets, and black beans.

Add walnuts, smoked paprika, cumin, chili powder, and salt to the mixture, pulsing until well combined yet retaining some texture.

Transfer the mixture to a bowl and add a flax egg (a mixture of flaxseed meal and water) and breadcrumbs to help bind the patties.

Form the mixture into patties and place them on a parchment-lined baking sheet. Bake for about 30-45 minutes, flipping halfway through, until the burgers are firm and slightly crispy on the outside.

Serve on buns with your choice of toppings, such as lettuce, tomato, avocado, or vegan mayonnaise.
