3. Greek Pasta Salad
To prepare a Greek Pasta Salad, begin by cooking your choice of pasta—such as penne, rotini, or fusilli—according to the package instructions until al dente. After draining, rinse the pasta under cold water to halt the cooking process and prevent sticking.

In a large bowl, combine the cooled pasta with diced cucumbers, halved cherry tomatoes, sliced bell peppers, red onions, Kalamata olives, and crumbled feta cheese. For the dressing, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and pepper.
Pour this dressing over the pasta mixture and toss thoroughly to ensure even coating. Chill the salad for at least 30 minutes before serving to allow the flavors to meld
4. Red, White & Blue Potato Salad
To make a Red, White & Blue Potato Salad, start by quartering equal amounts of small red, white (Yukon Gold), and blue (purple) potatoes. Place them in a large pot, cover with water, and add a generous amount of salt.

Bring to a boil and cook until the potatoes are fork-tender. Once cooked, drain and let them cool for about 30 minutes. In the meantime, prepare the dressing by mixing mayonnaise, sour cream, Dijon mustard, and seasonings like salt and pepper.
Once the potatoes have cooled, combine them with chopped celery, red bell pepper, green onions, and crumbled bacon in a large bowl. Pour the dressing over the potato mixture and toss gently to combine.
For added freshness and flavor, fold in minced fresh herbs such as basil, dill, and parsley. Refrigerate the salad until ready to serve.
