Unlike many processed seed oils that are hydrogenated—resulting in the formation of trans fats—tallow is rendered naturally without the need for hydrogenation. Trans fats are known for their harmful effects, including raising LDL (bad) cholesterol and lowering HDL (good) cholesterol.
