- 1 teaspoon garlic minced
- 2 tablespoons tomato paste
- 1 teaspoon oregano
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt

- 1 ½ cups (357 g) heavy cream

- Cook the Pasta:
- Cook the rigatoni pasta according to package instructions until al dente.
- Save 1 cup of the pasta water before you drain the pasta.
- Make the Sauce:
- Melt the butter in a big skillet over medium heat.
- Add the shallots and cook until they’re see-through. Then, add the garlic, sun-dried tomatoes, tomato paste, oregano, paprika, garlic powder, and salt, and cook for 2-3 minutes.
- Next, mix in the heavy cream, milk, and saved pasta water.
- Let it simmer. Finally, stir in the parmesan cheese until it melts and becomes smooth..

- Put the cooked pasta, chicken pieces, and spinach into the sauce.
- Mix everything together and cook for another 2-3 minutes until the spinach gets soft and wilted.
