Delicious Steak Fajitas in Minutes

I absolutely love making steak fajitas at home because they’re so flavorful and easy to prepare. The combination of tender, marinated flank steak with sautéed bell peppers and onions is simply irresistible.

Plus, it’s a quick meal that comes together in no time, perfect for busy weeknights. I always enjoy wrapping everything up in warm flour tortillas and adding my favorite toppings. Trust me, once you try this recipe, it’ll become a staple in your household too.

Ingredients:

  • 1 pound flank steak (or skirt steak)
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 6-8 flour tortillas (for serving)

Instructions:

  1. Prepare the Marinade:
    • In a bowl, combine the extra virgin olive oil, lime juice, chili powder, ground cumin, paprika, salt, garlic powder, and onion powder. Mix well to form a marinade.
  2. Marinate the Steak:
    • Place the flank steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
  3. Cook the Steak:
    • Preheat a grill or a large skillet over medium-high heat. Remove the steak from the marinade and discard the marinade. Grill or sear the steak for about 4-5 minutes per side, or until it reaches your desired level of doneness.
    • Once cooked, transfer the steak to a cutting board and let it rest for 5 minutes. After resting, slice the steak thinly against the grain.
  4. Sauté the Vegetables:
    • While the steak is resting, heat a large skillet over medium-high heat. Add a bit of olive oil if needed. Add the sliced red bell pepper, yellow bell pepper, and onion to the skillet. Sauté for about 5-7 minutes, or until the vegetables are tender and slightly charred.
  5. Assemble the Fajitas:
    • Warm the flour tortillas on the grill or in a dry skillet. Fill each tortilla with slices of steak and a generous portion of sautéed vegetables.
  6. Serve:
