- 3/4 lb brussels sprouts, cut in half
- 1 lb red potatoes, cut into 1-inch cubes
- 4 large carrots, peeled & cut into 1-inch pieces
- 8 cloves garlic, peeled
- 2 tbsp Italian seasoning, divided
- 2 tbsp vegetable oil
- 2 tsp salt, divided
- 2 tsp black pepper, divided
- 2 tbsp melted unsalted butter
- 3 lbs chicken pieces (thighs, breasts, drumsticks), bone-in and skin-on
Instructions
- Light up your oven and Ppeheat your oven to 475°F.
- Take a big bowl and mix the brussels sprouts, potatoes, carrots, garlic, 1 tbsp of the Italian seasoning, the vegetable oil, 1 tsp of salt, and 1 tsp of pepper.
- Take a small bowl, then mix the melted butter with the other 1 tbsp of Italian seasoning, 1 tsp of salt, and 1 tsp of pepper. Make sure that you pat the chicken dry with paper towels.
- Take your vegetable and spread the vegetables out in a single layer on a large baking sheet. You can also use a roasting pan. Take the chicken pieces with their skin-side up, and place them on top of the vegetables. Put the breast pieces in the center and the legs and thighs around the edges.
- Take the chicken and brush it with the butter mixture and pour any leftover butter over everything.
- Roast your chicken and vegetables. Roast for about 40 minutes. Make sure that you turn the pan halfway through cooking. Continue until the chicken thighs and drumsticks reach 175°F on a meat thermometer.
- Move the chicken to a serving platter and let it rest for 5 minutes before serving. Toss the vegetables in the pan juices and serve them with the chicken.
2. Baked Chicken Cheese Recipe
Ingredients
- You need 4 boneless, skinless chicken breasts, that are pounded thin and cut in half (8 pieces total).
- 1 beaten egg
- 3/4 cup Italian seasoned breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tbsp melted butter or olive oil
- 3/4 cup shredded mozzarella cheese
- 1 cup marinara or pasta sauce
- Cooking spray
Instructions
- Light up your oven and preheat it to 450°F. Lightly spray a baking sheet with cooking spray.
- Take a shallow bowl, then mix the breadcrumbs and 2 tbsp of grated Parmesan cheese.
- Take another bowl and beat the egg. Take a brush and brush the chicken with melted butter or olive oil, then dip it into the breadcrumb mixture to coat both sides.
- Place the breaded chicken pieces on a baking sheet. Lightly spray the tops with cooking spray.
- Bake for about 25 minutes.
- Take the chicken out of the oven and spoon 1-2 tbsp of marinara sauce over each piece. Top with 1-2 tbsp of shredded mozzarella cheese.
- Put the chicken back in the oven and bake for another 5 minutes until the cheese is melted.
- Serve immediately, with extra sauce on the side if you want.
3. Baked Chicken Marsala en Croute
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup softened cream cheese
- 1/4 cup grated Parmesan cheese that are divided
- 1 sheet frozen puff pastry, thawed
- 1 egg, beaten with 1 tbsp water (for egg wash)
- Salt and pepper to taste
For the Marsala Sauce:
- 3 tbsp butter
- 1/2 lb sliced baby portobello mushrooms
- 2 shallots, finely chopped
- 3 garlic cloves, minced
- 1 tbsp all-purpose flour
- 1 cup Marsala wine
- 1 cup chicken broth
- 2 tsp fresh thyme leaves
- Salt and pepper to taste

- Light your oven and Preheat to 400°F.
- Take the chicken breasts and pound them to 1/4-inch thickness between two sheets of plastic wrap. Add salt and pepper(optional) to season.
- Take a small bowl and then mix it with softened cream cheese plus the 2 tbsp of the Parmesan cheese. Take this mixture and spread it evenly over the chicken breasts.
- You then roll out the puff pastry on a lightly floured surface in your kitchen. You then place the chicken on one half of the pastry and also fold the other half over the chicken and crimp the edges to seal it.
- Take the wrapped chicken seam-side down on a parchment-lined baking sheet. Brush with the egg wash and sprinkle the remaining 2 tbsp of Parmesan cheese on top.
- Bake for 20-25 minutes in the oven until the pastry turns golden brown and the chicken is cooked through.
- As the chicken is baking, make the Marsala sauce. In a skillet, melt the butter over medium-high heat. Add the mushrooms and cook for 3-4 minutes until browned.
