Pan-fry the breaded chicken in olive oil until golden brown on both sides. Place the fried chicken on a baking sheet, top each piece with marinara sauce and slices of mozzarella cheese, and bake in a preheated oven until the cheese is melted and bubbly.

This classic French dish involves braising chicken in red wine with vegetables and aromatics. Start by browning pancetta in a large Dutch oven, then remove and set aside. Season chicken pieces with salt and pepper, dredge in flour, and brown them in the rendered pancetta fat.
Remove the chicken and sauté sliced onions, carrots, and garlic until softened. Deglaze the pan with Cognac, then return the chicken and pancetta to the pot. Add red wine and chicken stock to cover the chicken, along with thyme and bay leaves.
Simmer until the chicken is tender and the sauce has thickened. In the final stages, add sautéed mushrooms and pearl onions. Serve hot, accompanied by crusty bread or over buttered noodles.
3. Butter Chicken (India)
Marinate chicken pieces in a mixture of yogurt, lemon juice, and spices such as garam masala, cumin, and paprika for at least 30 minutes. In a large skillet, heat oil and sear the marinated chicken until browned; remove and set aside.

In the same skillet, melt butter and sauté chopped onions until translucent. Add minced garlic, grated ginger, and additional spices, cooking until fragrant. Stir in tomato puree and simmer until the sauce thickens. Return the chicken to the skillet, cooking until fully cooked.
